Waiting for Smoky...

only until this Friday! I just got back from my first trip to PetSmart to get the essentials and then some! I hope I'm not having second poo, waking up before 9:30 on my days off, going out when its cold, $$$, etc.!! Embarrasingly, I had a weird nightmare the other night that I let Smoky get runover, but he didn't get hurt he was just trapped on a truck's front bumper and I was having to chase them through like New York style traffic to unhook him. What are we getting ourselves into?!?!? I guess we will find out pretty soon!

Neiman Marcus Brownies

Next time you are in charge of bringing the desert, try these instead of ordinary brownies. They are sooo good and are always a hit. They taste like mini cheesecake bites, yum!!

1. 1 bx butter pecan cake mix
2. 1 stick of butter, melted
3. 1 egg
4. 1 box of powdered sugar
5. 1 stick of butter, melted
6. 1 pkg. 8 oz cream cheese
7. 2 eggs
8. chopped pecans

Mix first three ingredients together and press into greased 13x9 pan. Mix well the last ingredients except pecans and pour over cake. Cover with chopped pecans. Bake @ 300 for 55-60 minutes. Until tops are just a little browned; as above. Cool--then I cover and put the whole pan in the fridge overnight (a couple of hours will work too) to cut the next day. You do not have to do this but it will make it so much easier to cut and serve. Really good!


Brent and I were out running errands the other day and I got him to drive through Starbucks to get me an afternoon cup of coffee. It took a little convincing because Brent hates that I spend $4 for a mocha. I do agree with him, so I only try to "treat" myself a couple of times a week. I do admit, sometimes it's 4 times a week!! Anyways, we went through the drive thru and this is how it went....

Brent: I want one SMALL mocha

Starbucks Guy: Okay, that's one TALL mocha

Brent: No, a small mocha.

Starbucks Guy: Yes Sir, that's one tall mocha

So, I had been digging through my purse during all this and after like the third time of this exchange I realize what was happening and couldn't even stop laughing to tell Brent to PLEASE pull ahead until after the 4th time they did this! By this point, Brent was practically screaming SMMMAALLLL. So funny!!

a quick side note...

Brent (my sweet hubby) is the one who started this blog. I had no clue we had a blog until he casually mentioned it one day after we were married. I was not so fond at first...but obviously I have taken to it!! I think it is great way to keep a "journal" of our life and sometimes share some cool stuff (i.e. recipes, hints, ideas) with the world. Something to look back at and one day for even our kids to enjoy. I wish my parents had done something like this. It's so hard to imagine that they were once in their twenties and actually did cool things (quick disclaimer: I'm sure we're a bore to 99% of people, but we are loving our "cool" life)!!! Haha. So, for someone that hates scrapbooking and who has started and stopped a dozen journals throughout my life (the longest one being only 6 entries)...yay for blogging!

Also, of course, this blog is for friends and family to enjoy along the way and keep in touch. By the way, I just realized we had "comments", woo hoo!! I thouroughly enjoyed reading the ones we had, even if a little late! I'm obviously still learning all the bells and whistles of this thing.

Weekend Getaway

We decided to head to Gatlinburg for the weekend on Friday afternoon, VERY last minute to say the least! I thought I was a pretty spontaneous person, but sadly I'm NOT! I like to plan and mentally prepare for trips. I gave Brent a million reasons why we shouldn't go (lets have a date night in Knoxville, laundry, housework) Isn't that pathetic!?!? Chandler (an intern with Brent) and Alicia joined us. They are such a neat couple and we have so much fun hanging out with them. Thanks to my wonderfully, awesome husband for planning this and dragging me along! Great, great time!! Enjoy the pics!

It snowed all day Monday and when Brent got home from Journal Club around 8:30 that night he said "lets go sledding." We went to a nearby park and met up with the Milligan's and enjoyed the snow. It was really foggy so my pictures aren't that great and my battery died way too soon!

Some not so good highlights from our sledding adventure....I bruised the crap out of my tailbone when I hit a dip in the hill (actually it could have been a rock, I don't really know) and Brent lost his cell phone. UPDATE: a highschool kid called me last night saying he had found this phone at the park. I met him this morning at Starbucks and picked up Brent's phone (I got him a starbucks gift card) Yeah!! Just amazing....we had both figured, besides the phone being lost it would be ruined from the snow anyway. My tailbone is still bruised, I have forgotten what this feels like considering I think it's been like 15 years since I've last done it. It's getting better though!
