Virginia Creeper Trail

The V. C. trail is a 35 mile stretch of "rails to trails" open to biking, hiking, etc.

We did the 17 mile stretch from Whitetop, VA to Damascus, VA today.

We got to Damascus last night and stayed at the Apple Tree BED AND BREAKFAST (a first for Brent and I). We enjoyed it...I mean you are basically sharing a, I kind of felt like I had to tip-toe around! We did get to enjoy a home cooked breakfast with a cool couple from Asheville whom were also riding the trail. Overall, neat experience....we'll probably do it again.

The ride was awesome. We took a shuttle up with the bikes and then got to enjoy the 17 mile downhill ride. Enjoy some pictures...we took a lot....

Hallelujah: No more trench!

However, our yard still stands out like a sore thumb!!

It looks like it snowed...

but that is our freshly seeded yard covered with "hay."

Now, if only it will grow. This stuff did not come with instructions and I am freaking out a bit. Please grow. Please grow. Please grow. I beg you, PLEASE GROW!!

Old-Fashioned Chocolate Pie (Directly from the Prime Meridian cookbook)

1/3 cup cocoa
4 eggs, separated
1/3 all purpose flour
1/4 cup butter, softened
1 1/2 cup sugar, divided
1 teaspoon of vanilla
1/4 teaspoon of salt
2 cups milk
1 8inch pie crust, Baked

Preheat oven to 350. In a saucepan, mix cocoa, flour, 1 cup sugar and salt. Add milk and egg yolks. Blend well. Add butter.

Over medium heat, cook stirring constantly, until thick. Add vanilla. I got a little worried/impatient at this part, but keep going. It will thicken up and it happens in less then a minute! Pour into crust.

Beat egg whites until fluffy. Add remaining 1/2 cup sugar and beat until peaks form. Spread over pie. Mine never peaked, but I still poured it over the pie----still delicious. Next time I will be more patient and have peaks, because it would have been gorgeous!!

Bake 10 minutes or until golden brown. Refrigerate.

I just ate the last piece this morning with my coffee. To me, it's as good as any restaurant's. And let me tell you....I know my chocolate!!

As a side note: The Prime Meridian is produced straight from my hometown, the queen city, Meridian, Mississippi. And it is like my cooking bible. Every household needs one.

Jenny got Married!!

FINALLY after almost six years.....Introducing.....

Mr. and Mrs. Barrier Mitchell
(love this picture)

Loved her veil...I think I said the word "vintage" 100 times

I did a horrible job taking pictures and didn't even bring my camera to the wedding and reception. So sad, because there were so many good pictures to take with so many great people!

Here are just two from the rehersal dinner...

My mom and sister and me (where did I come from?)

And of course one of the hubby and I.

We had so much fun and look forward to the future!

We love ya'll
