Sweet, Sweet Corn

Brent's dad bought us some corn---straight from the Hardin farm---last weekend while we were in Mississippi, 
and boy did we enjoy it!

I had to recruit Brent to help chop off the was a pretty tough job. 

We froze some...for later (we also shared some with the neighbors)

Then we boiled the rest.

Can you see the yumminess?  Butter and salt = perfect.

Then I saved some kernels for this recipe (see below) a couple nights later...
(remember when your Mom used to cut the corn off the cob for you?)

(super easy and delicious)

1 box of Jiffy corn mix
1 cup shredded cheddar cheese
8oz sour cream
1 stick of butter
2 cans of cream corn (I always use one can of cream corn and one can of kernel corn...or in this case fresh, sweet corn)

Preheat oven to 350.  Combine ingredients.  Bake in a greased casserole dish for 45 minutes.
